Here's a fantastic recipe for truffles from a book called Enlightened Eating, by Caroline Marie Dupont. They are so yummy and so healthy!
1 1/2 cups walnuts (or cashews)
3/4 cup soft dates
2 - 4 Tbsp raw carob or cocoa powder or raw cocao nibs ground in a coffee grinder
1 - 3 tbsp water or orange juice (depends on the moistness of the dates)
1/2 cup chopped dried apricots, coconut, orange rind, or other dries fruit (optional)
1. Grind the nuts into a fine meal food processor
2. Add dates and process until smooth
3. Mix in cocoa or carob powder and chosen liquid if needed (so that the mixture sticks)
4. Mix in optional fruit if desired
5. Roll into small balls and then roll in coconut or carob
OMG!! These sound sooo good...I have to try them!! I buy date nut balls rolled in coconut from my local health food store and treat myself to one a day.....with my tea at night. But these sound heavenly. Will let you know how they turn out.
