This is a great recipe that kids love.....and it's a great way to get them eating legumes.

1 cup uncooked long grain brown rice
1 can (16 oz) navy beans, rinsed
1 large onion, diced
1 tbsp olive oil
1 can (about 14 oz) diced tomatoes with liquid
2 tsp chili powder
1/4 tsp sea salt
1 1/4 cups shredded cheddar cheese

1. Cook rice according to package directions. Transfer to a bowl and add beans.
2. In a non stick skillet, sautee onions in oil for about 4 mins. Stir in tomatoes, chili powder and salt. Bring to a boil and remove from heat.
3. Coat an 8" square baking dish with oil or butter. Layer the following: rice/bean mixture, cheese, and tomato/onion mixture. Repeat layers until ingredients are used up. Reserve 1/4 cup of cheese for later.
4. Cover and bake at 350 F for 30 mins or until heated throughout. Uncover, sprinkle with remaining cheese and bake 10 mins longer.

Let stand for 10 mins. before serving
