2 6 ox cans of salmon, drained
2 Eggs
1 Cup of milk/soy/rice
3/4 Cup of organic rolled oats
1/4 Cup of crushed flax seeds
2 Tablespoons of chives/green onion
2 Teaspoons of apple cider vinegar
Pepper
1/2 teaspoon of dried mustard (optional)
Flake salmon (or tuna) and combine with the other ingredients.
Pack into a greased/non-stick loaf pan.
Bake in 375 degree oven for 35-40 minutes.
Serve with a seasonal salad or fruit for a healthy, low fat and inexpensive meal.
It's pretty tasty if you eat canned fish. Our son eats it with mustard on the side.

I suppose that if you are concerned with bones and your little one you could buy the cans that don't contain them, although you do get calcium from them.

I'm trying this tonight. Sounds easy enough to whip up......and nutritious as well :) I wonder if I can sneak a few more veggies into it ie. shredded carrots or zucchini.

Such a simple recipe. Let me know how the added veg worked! I worked on the consistency-trying to get it to form a firm loaf. I wonder if the added moisture would change it.

It was a bit mushy. I will also play with it and see how I can firm it up. It was tasty though....and the kids gobbled it up with some mustard as recommended. Thanks!
